I just want to say that when I post recipes on this blog, I will not write a short novel prior to presenting the recipe. π Suffice to say that these cookies are probably the best pumpkin flavored thing I have ever made. (And I have an excellent pumpkin muffin recipe.) They’re easy and so yummy. Hope you enjoy!
Ingredients:
2 1/3 cup all purpose flour
2 tsps. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground cloves
An egg
1/2 tsp. ground ginger
1/4 cup molasses
1/3 cup canned pumpkin
1/2 cup of salted butter
1 cup granulated sugar
Instructions:
1. Beat together the butter and sugar till fluffy.
2. Mix in egg, pumpkin, and molasses.
3. In a separate bowl, whisk together the flour, cinnamon, ginger, cloves, and baking soda till blended.
4. In three portions, mix the dry ingredients in with the wet ingredients. When blended, pop the batter into the freezer for half an hour or until firm.
5. Preheat oven to 350F.
6. Remove the dough and place two inches apart over a cookie sheet covered in parchment paper. Cookies should be about one tablespoon of dough. (I use one of those little cookie scoops.)
7. Bake for 4-5 mins, then flip the pan 180 degrees and bake 4-5 more minutes.
8. Remove from the oven and allow to cool for 2 minutes before cooling on wire rack.
This recipe makes about 2.5 dozen cookies.
